This recipe is perfect for keeping hormones balanced for those that don’t want a savoury breakfast.
Ingredients
- 1 bag of 400g of mixed nuts
- 1-2 tablespoons coconut oil
- 1 x half tsp cinnamon
- Honey or maple syrup (optional)
- Natural yoghurt (optional)
- Fresh berries (optional)
Method
Melt a lump of coconut oil in a roasting tin in the oven, just a couple of tablespoons. Then I would put a mix of nuts in a tea towel and bash them with a rolling pin! or saucepan so that they break up but don’t turn into powder.
Once the oil has melted, take it out of the oven and add half a teaspoon of cinnamon and then the nuts. I use the mixed nuts from Sainsbury’s.
Mix it all together and then roast at 160 degrees C, or gas mark 3 roast for approx 15-18 minutes. The cashews will turn golden when it’s ready.
If you need a little sweetness you can try a little honey or maple syrup in with the cinnamon but no more than a teaspoon.
Leave to cool and try not to eat it all before it’s cold! 😂
To Serve
Serve with some natural yoghurt and fresh berries.
