Ingredients
- One head of radicchio
- Head of white chicory
- 3 oranges
- Salad dressing
This will make extra so you can use it to make a green salad taste extra delicious.
For the dressing – (this will make extra, but it keeps for ages)
- 300 ml olive oil
- 100 ml apple cider vinegar
- 1tsp dijon mustard
- 1 tsp honey
- Salt and pepper
Method
- First, peel the oranges and finely slice across the segments while removing as many pips as you can.
- Core and chop the radicchio, separate the leaves completely so they are only one leaf thick.
- Take 8 chicory leaves and chop across the grain.
- Add some dressing, toss thoroughly, and serve with grilled meat or fish.
It goes great with barbecues. Enjoy!
