Serves 8 as a side dish. Prep time 45 minutes. Cooking time 60 minutes.

Ingredients

  • Half a red cabbage, core removed
  • 2 tbsp olive oil
  • 1 large brown onion
  • 1 large Bramley cooking apple
  • Pinch of ground cloves
  • 2 tbsp dark brown muscovado sugar
  • Half a mug of red wine
  • Half a mug of water
  • Salt and pepper to taste

Method

I tend to cook this the day before while cooking another meal, it tastes even better after 24 hours!

  • Half the red cabbage and remove the core
  • Slice finely with a sharp knife or use the slice on your food processor
  • Leave to soak in cold water for 30-40 minutes
  • Take a large saucepan so that there is space once the cabbage is added
  • Once the cabbage has soaked quarter and slice the onion then fry gently in a little olive oil
  • Add in a pinch of ground cloves
  • Drain the water off the cabbage, add to the saucepan and stir in with the onion
  • Now peel, core and thinly slice the apple and add to the pan
  • Add the sugar, wine and water and stir all ingredients together
  • Bring to the boil and leave to simmer very gently for an hour
