Serves 8 as a side dish. Prep time 45 minutes. Cooking time 60 minutes.
Ingredients
- Half a red cabbage, core removed
- 2 tbsp olive oil
- 1 large brown onion
- 1 large Bramley cooking apple
- Pinch of ground cloves
- 2 tbsp dark brown muscovado sugar
- Half a mug of red wine
- Half a mug of water
- Salt and pepper to taste
Method
I tend to cook this the day before while cooking another meal, it tastes even better after 24 hours!
- Half the red cabbage and remove the core
- Slice finely with a sharp knife or use the slice on your food processor
- Leave to soak in cold water for 30-40 minutes
- Take a large saucepan so that there is space once the cabbage is added
- Once the cabbage has soaked quarter and slice the onion then fry gently in a little olive oil
- Add in a pinch of ground cloves
- Drain the water off the cabbage, add to the saucepan and stir in with the onion
- Now peel, core and thinly slice the apple and add to the pan
- Add the sugar, wine and water and stir all ingredients together
- Bring to the boil and leave to simmer very gently for an hour
