These chocolatey nut treats are tasty enough to nurture that desire for something sweet, while the nuts provide protein and healthy fats. This makes them satisfying and helps to slow down the absorption of the sugar compared with eating chocolate on its own.
They’re simple to make and can be kept in the fridge for those moments when you fancy a little something with a cup of tea or after a meal. Don’t eat them all at once!
Ingredients
Salted almond and dark chocolate bars
Preheat the oven to 150°C
- 100g dark chocolate, ideally 70–85% with less than 25g sugar per 100g
- 150g almonds
- 2 tbsp boiled water
- 1 tsp sea salt
Find a small roasting tin, melt the salt in the boiled water and then stir the almonds into the salty water. Leave for 15-20 minutes stirring once or twice. Now place them in the preheated oven and put a 10 minute timer on repeat. Bake for 20 minutes stirring after 10. Leave them to cool completely.
Break the chocolate into squares and place on greaseproof paper on a flat oven tin. Melt the chocolate gently in the oven, this will take only a few minutes. Take a fork and gently stroke the chocolate so it covers an even layer on the tin.
Put the almonds onto the chocolate one by one, filling as much space as you can. Before placing in the fridge score the chocolate into approximately 2cm squares, this makes it easier to break later. Refrigerate for 3-5 hours before breaking into squares and placing in a bag or box in the fridge.
Allowing the toasted nuts to cool before adding to chocolate is important; otherwise, it may affect how the chocolate sets.
Enjoy.
