These are delicious and perfect for Easter gifts, either to yourself or a loved one.
Ingredients:
- 1 teaspoon coconut oil
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 200g nuts of your choice – I used a bag of mixed nuts
- 200g dark chocolate (85%)
- 1/2 tsp Flaked sea salt
Method:
Heat the oven to 160°C.
- Put 1 teaspoon of coconut oil and 1/2 teaspoon cinnamon and 1/2 teaspoon powdered ginger into a baking tray and put in the oven for a few minutes to melt.
- Chop the nuts coarsely. Remove the baking tray from the oven and add the nuts to the oil mix and stir thoroughly, put them in the oven for 10 minutes. Remove from oven and leave to cool.
- Melt the chocolate, either in a bowl over boiling water or in the microwave for 60 secs. If you microwave it you will need to stir it well before you add the nuts. Once cool, add the nuts to the melted chocolate and mix thoroughly.
- Line a baking tray (that fits in your fridge) with baking paper and thickly spread the mixture over the paper. Sprinkle with flaked sea salt.
- Now place in the fridge for at least an hour and then you can break it into pieces and serve on a brightly coloured plate or napkin for Easter.
