I wanted to share this delicious recipe with you, it’s a real favourite in our house and can be made super quickly. Preparation time 10-15 mins and this recipe serves 4
For the dressing
- Juice of 1 lemon
- 1 tsp dijon mustard
- 1 tbsp runny honey or maple syrup
- Sprinkle about 1/4 tsp of ground ginger
- The same amount of ground cinnamon
- 90-100ml olive oil
For the salad
- 350-400g carrots
- A small handful of pistachios about 30 nuts
- 4-6 stalks of fresh parsley
- Handful sultanas
Start by making the dressing, this can be done in the serving bowl. Add all the dressing ingredients plus the sultanas and mix them thoroughly.
Now grate the carrots, if you do this on a machine use the finer grater. Add them to the dressing as soon as they are grated as they will oxidise and go brown very quickly. Toss thoroughly.
Chop the pistachios roughly into halves and finely chop the parsley. Add both to the carrot mixture. Now mix the whole thing thoroughly. If there is any leftover it will keep well in the fridge in an airtight container.
