This is super filling and a great way to have healthy carbs with your protein, no extra veg needed! I’ve also made it with flat green beans and with asparagus, choose your greens.

Ingredients

  • 120g quinoa
  • 120g frozen peas
  • 80g frozen edamame
  • 75g fresh sugar snaps
  • 4 spring onions
  • a little olive oil
  • Salt and pepper to taste

Instructions

  1. Put the quinoa with 360ml of cold water and a pinch of salt in a medium saucepan, not too small as it needs a reasonable surface area.
  2. Bring to the boil and allow to simmer for 20 minutes. Then leave to cool and swell.
  3. Now boil enough water, wit a little salt, to cover the peas, beans and sugar snaps, once boiling add tea to the water and boil for 2 minutes, that’s all.
  4. Drain them and run cold water over them.
  5. Chop the spring/salad onions finely.
  6. Now add all the ingredients to a serving bowl with a drizzle of olive oil and stir thoroughly.
  7. Add salt and pepper to taste.
  8. And serve.

This will last 3-4 days in the fridge and still be super tasty.
