This is super filling and a great way to have healthy carbs with your protein, no extra veg needed! I’ve also made it with flat green beans and with asparagus, choose your greens.
Ingredients
- 120g quinoa
- 120g frozen peas
- 80g frozen edamame
- 75g fresh sugar snaps
- 4 spring onions
- a little olive oil
- Salt and pepper to taste
Instructions
- Put the quinoa with 360ml of cold water and a pinch of salt in a medium saucepan, not too small as it needs a reasonable surface area.
- Bring to the boil and allow to simmer for 20 minutes. Then leave to cool and swell.
- Now boil enough water, wit a little salt, to cover the peas, beans and sugar snaps, once boiling add tea to the water and boil for 2 minutes, that’s all.
- Drain them and run cold water over them.
- Chop the spring/salad onions finely.
- Now add all the ingredients to a serving bowl with a drizzle of olive oil and stir thoroughly.
- Add salt and pepper to taste.
- And serve.
This will last 3-4 days in the fridge and still be super tasty.
