This Hummus recipe really surprised me in flavour and texture. I made it because my son has just been told that he is reacting to sesame seeds so there is no tahini in this one.
It’s really easy to make and simply delicious.
Ingredients
- One red onion or medium shallot.
- 2 cloves of garlic
- One 14oz can of chickpeas
- Juice of half a lemon
- Salt and pepper to taste
- 3-4 tablespoons olive oil
Method
- Start by finely chopping the onion, then squash the garlic with a knife and chop it as well.
- Put 2 tablespoons of olive oil in a small frying pan and put on medium heat. Add in the onion and the garlic and cook over gentle heat with a pinch of salt to stop it burning until it starts going soft and caramel in colour.
- While the onion is cooking add the other ingredients to the food processor.
- When the onion is ready remove a tiny amount, half a teaspoon, from the mix and put to one side. Now add the onion and garlic to the food processor, blitz in pulses until it turns to a paste but not too smooth. Now turn it out into a bowl to serve and use the last bit of onion to decorate.
