(Almonds with lemon & black pepper)
These simple lemony almonds are a lovely way to support your body when you’re having a drink.
Alcohol on its own can push blood sugar up fast and then quickly down again. And this is why cravings, over-snacking and energy crashes show up later on. Almonds provide protein, healthy fats and fibre, which help slow that process and keep insulin steadier. Enjoy.
Ingredients
- 200g Almonds
- 1/2 tsp coarse-ground black pepper
- Juice of half a lemon
- 2 tbsp water
- Pinch of sea salt
- Drizzle of olive oil
Method
Preheat the oven to 160°C.
Put all the ingredients except olive oil into a large bowl, leave for 20 minutes, mix thoroughly at 5 minute intervals.
Spread the nuts over a roasting tin and put them in the oven for a total of 20-30 minutes. Set a timer as you need to stir them every 5 minutes and check they aren’t burning. They are ready when they dry out and start to colour, don’t let them go black! Drizzle with a very small amount of olive oil and shake to cover all the nuts.
Leave to cool. They will keep in a jam jar if they last that long!
